Welcome to MaulerMeals, where you can find your fuel for an afternoon full of football.  Today’s MaulerMeal begins with a few soft-boiled eggs and a juicy, tender medium-well filet with roasted mushrooms.  Dessert is a Belgian waffle, accented with fresh strawberries and blueberries.

Soft Boiled Eggs

Ingredients

Eggs

Salt

Pepper

Instructions

1.) Place the eggs in a saucepan and fill with two inches of cold water.  Add several pinches of salt to prevent cracking.

2.) Heat the pot on high heat and bring to full boil.

3.) Once boiling, turn off the heat but leave over the heat and wait 10-12 minutes.

4.) Remove.  Plate.  Let cool.

Filet Mignon

Ingredients

6 ounce Filet Mignons (thawed)

3/4 pounds of fresh mushrooms (sliced)

9 tablespoons of butter

2 tablespoons of oil

1 cup of heavy cream

Salt

Pepper

Instructions

Place three tablespoons of butter in a sauce pan over medium heat.  Add mushrooms and saute and stir occasionally for 8 – 10 minutes.

Add flour and stir in warmed cream, reducing heat.  This is a great time to add salt and pepper, as appropriate.In another pan, heat two tablespoons of oil on medium heat.

Add filets for 3 – 4 minutes for each side.  For a more rare cook, remove after 2 1/2 minutes (it’s important to cook your food thoroughly.)  Plate and let sit.

Remove mushrooms and plate, as well.  Feel free to drain sauce from mushrooms over filet, as appropriate.

Belgian Waffle

Ingredients

1 cups of flour

1/3 cup of sugar

1 3/4 teaspoons of baking powder

Egg (separated)

3/4 cups of milk

1/2 cup of butter (melted)

1/2 teaspoon of vanilla extract

Strawberries

Blueberries

Instructions

Preheat waffle iron.

Combine flour, sugar and baking powder in a large bowl.  In a separate bowl, break eggs and lightly beat the yolks, then add milk, butter and vanilla.  Stir well.  Mix the dry ingredients until combined.  Beat the egg whites until stiff; then fold into batter.

Place batter into the waffle iron (follow the manufacturer’s instructions) until golden brown.

Remove and top with your favorite fresh fruit and syrup.
